Description

Delightful zucchini filled with your choice of savory ingredients for a comforting and nutritious meal.


Ingredients

Scale
  • 2 medium zucchinis
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Optional: ground meat, beans, quinoa (for filling)
  • Optional: chopped bell peppers and onions
  • Optional: cheese (for topping)
  • Optional: herbs and spices (basil, oregano, etc.)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the zucchinis and pat them dry.
  3. Slice each zucchini in half lengthwise.
  4. Scoop out the seeds using a spoon.
  5. Combine filling ingredients in a mixing bowl.
  6. Drizzle olive oil over the zucchini halves, sprinkle with salt and pepper.
  7. Spoon the filling into each zucchini half.
  8. Sprinkle cheese on top, if desired.
  9. Roast in the oven for about 25-30 minutes.
  10. Allow to cool before serving.
