- 2 medium zucchinis
- 2 tablespoons olive oil

Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the zucchinis and pat them dry.
- Slice each zucchini in half lengthwise.
- Scoop out the seeds using a spoon.
- Combine filling ingredients in a mixing bowl.
- Drizzle olive oil over the zucchini halves, sprinkle with salt and pepper.
- Spoon the filling into each zucchini half.
- Sprinkle cheese on top, if desired.
- Roast in the oven for about 25-30 minutes.
