Ingredients

  • 6 large egg yolks fresh, at room temperature
  • 3/4 cup granulated sugar
  • 1 cup mascarpone cheese at room temperature
  • 1 1/2 cups heavy whipping cream cold
  • 2 cups strong brewed espresso or coffee cooled completely
  • 1 pack ladyfinger biscuits (Savoiardi)
  • unsweetened cocoa powder for dusting
  • dark chocolate shavings optional, for garnish

Instructions

  • In a large bowl, beat egg yolks and sugar on high speed for about 5 minutes until thick and pale.
  • Gently add the mascarpone cheese and mix slowly until the cream is smooth and lump-free.
  • In a separate cold bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the mascarpone mixture to keep it light and airy.
  • Pour cooled espresso into a shallow bowl. Optionally add a teaspoon of vanilla extract for extra flavor.
  • Quickly dip each ladyfinger into the coffee for 1–2 seconds per side, ensuring they are moist but not soggy.
  • Lay a single layer of dipped ladyfingers at the bottom of a 9x13-inch dish.
  • Spread half of the mascarpone cream evenly over the ladyfingers.
  • Add another layer of soaked ladyfingers, then spread the remaining mascarpone cream on top.
  • Cover with plastic wrap and refrigerate for at least 6 hours, preferably overnight.
  • Before serving, dust generously with unsweetened cocoa powder and sprinkle with dark chocolate shavings if desired.

Notes

Use strong brewed coffee or espresso for best flavor. Make sure the mascarpone is at room temperature to avoid lumps. For a fruity twist, add a layer of fresh raspberries or strawberries. Store covered in the refrigerator for up to 3 days.
