Description

Delicious no-bake treat combining crispy rice cereal, peanut butter, and a rich chocolate coating.


Ingredients

  • 6 cups crispy rice cereal
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1 tablespoon butter or coconut oil (optional)


Instructions

  1. Grease a 9×13 inch baking dish with butter or cooking spray.
  2. In a medium saucepan over medium heat, combine sugar and corn syrup, stirring until it comes to a gentle boil.
  3. Remove from heat and mix in peanut butter and vanilla until smooth.
  4. Pour crispy rice cereal into the peanut butter mixture and stir gently until fully coated.
  5. Transfer the mixture into the greased baking dish and press down firmly with a spatula or your hands.
  6. In a microwave-safe bowl, melt chocolate chips with butter (if using) in 20-second intervals, stirring until smooth.
  7. Pour and spread the melted chocolate evenly over the cereal mixture.
  8. Chill in the refrigerator for about 1-2 hours to let the chocolate set.
  9. Once set, cut into squares and enjoy!

Notes

Store in an airtight container at room temperature for up to a week or refrigerate for longer freshness. Can freeze individual bars for up to 3 months.
