Description
Delicious no-bake treat combining crispy rice cereal, peanut butter, and a rich chocolate coating.
Ingredients
- 6 cups crispy rice cereal
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 1 tablespoon butter or coconut oil (optional)
Instructions
- Grease a 9×13 inch baking dish with butter or cooking spray.
- In a medium saucepan over medium heat, combine sugar and corn syrup, stirring until it comes to a gentle boil.
- Remove from heat and mix in peanut butter and vanilla until smooth.
- Pour crispy rice cereal into the peanut butter mixture and stir gently until fully coated.
- Transfer the mixture into the greased baking dish and press down firmly with a spatula or your hands.
- In a microwave-safe bowl, melt chocolate chips with butter (if using) in 20-second intervals, stirring until smooth.
- Pour and spread the melted chocolate evenly over the cereal mixture.
- Chill in the refrigerator for about 1-2 hours to let the chocolate set.
- Once set, cut into squares and enjoy!
Notes
Store in an airtight container at room temperature for up to a week or refrigerate for longer freshness. Can freeze individual bars for up to 3 months.
