Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- Food coloring (various colors)
- Rainbow sprinkles (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened butter and granulated sugar until fluffy (about 2-3 minutes). Add the egg and vanilla extract; mix until fully combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until well combined.
- Divide the dough into equal portions (about 5). Add food coloring to each portion and knead until evenly distributed.
- Roll small pieces of each colored dough into balls, layer them in a circle, and press gently. Roll the layered dough into a log shape, then slice cookies about ½ inch thick.
- Place the cookies on the prepared baking sheets about 2 inches apart. Bake for 8-10 minutes or until the edges are slightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For firmer cookies, chill the dough for 30 minutes before slicing. Custom flavors can be added, and different types of sprinkles can enhance the look.
