Ingredients
- 1 whole chicken (about 3–4 lbs), cut into pieces
- 8 cups of chicken broth
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- ½ cup milk
- ¼ cup butter, melted
- Fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions
- In a large pot, add the chicken pieces and pour in the chicken broth. Bring to a boil and reduce to a simmer. Cook until the chicken is tender and fully cooked, about 30-35 minutes.
- Remove the chicken and let it cool for a few minutes before shredding the meat. In the same pot, add the onion, carrots, and celery. Cook until softened, around 5-7 minutes.
- In a bowl, mix flour, baking powder, and salt. Create a well in the center. Pour in the milk and melted butter. Stir until combined.
- Return the shredded chicken to the pot and season with salt and pepper to taste. Carefully drop spoonfuls of the dumpling mixture into the simmering broth.
- Cover the pot and let the dumplings cook for about 15-20 minutes, or until they are fluffy and cooked through.
- Spoon the chicken and dumplings into bowls and garnish with chopped parsley.
Notes
For a quicker option, swap with rotisserie chicken. You can also make it gluten-free by substituting with gluten-free flour.
