Ingredients

  • 1/2 cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder

  • 2 tablespoons cinnamon
  • 1/2 cup softened butter for filling
  • Optional: 1 teaspoon cornstarch
  • 1 cup powdered sugar (for icing)
  • 12 tablespoons milk (for icing)

Instructions

  1. Cream butter and sugar until light and fluffy. Add egg and vanilla, mixing until smooth.
  2. Whisk together flour, baking powder, salt, and optional cornstarch. Gradually add to wet ingredients until just combined.
  3. Chill the dough in a rectangular shape for at least 45 minutes.
  4. Mix brown sugar and cinnamon for the filling. Spread softened butter on rolled dough.
  5. Roll the dough into a log and chill again for 30-60 minutes.
  6. Preheat oven to 350°F. Slice the log into rounds and bake for 9-12 minutes until edges are set.
  7. Cool before drizzling with icing made of powdered sugar, milk, and vanilla.

Notes

For a thicker icing, use less milk. You can freeze unbaked log or baked cookies for later enjoyment.
