Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- Optional: 1 cup corn kernels or jalapeños
Instructions
- Preheat your oven to 400°F (200°C). Grease an 8×8 inch baking dish or cast-iron skillet.
- In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.
- In another bowl, whisk together the milk, eggs, and melted butter until frothy.
- Pour the wet ingredients into the dry ingredients. Stir until just combined; batter should be lumpy.
- Fold in optional corn kernels or jalapeños for added flavor.
- Pour the batter into the prepared dish or skillet. Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
Notes
