Description

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • Optional: 1 cup corn kernels or jalapeños

Instructions

  1. Preheat your oven to 400°F (200°C). Grease an 8×8 inch baking dish or cast-iron skillet.
  2. In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, whisk together the milk, eggs, and melted butter until frothy.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined; batter should be lumpy.
  5. Fold in optional corn kernels or jalapeños for added flavor.
  6. Pour the batter into the prepared dish or skillet. Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.

Notes

Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to a week. For longer storage, freeze slices in a resealable bag for up to 3 months.
