Description

Ingredients

  • ½ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (or your favorite mix-ins)
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the chocolate chips and nuts (if using) until distributed evenly throughout.
  7. Drop spoonfuls of dough onto the prepared baking sheet, ensuring they have room to spread. Bake for 10-12 minutes or until golden brown around the edges and slightly soft in the center.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For an allergy-friendly version, substitute nuts with seeds like sunflower or pumpkin seeds. These cookies also freeze well for up to three months.
