Description

A fun, gooey watermelon treat that brings back summer memories, perfect for kids and summer gatherings.


Ingredients

Scale
  • 4 cups of watermelon puree (about 1 medium watermelon)
  • 1/4 cup of sugar
  • 2 tablespoons of cornstarch
  • 1/4 teaspoon of salt
  • 1 tablespoon of lemon juice
  • Optional: food coloring (green or pink)
  • Optional: gummy worms for garnishing

Instructions

  1. Prepare the watermelon puree by cutting the watermelon into chunks, removing seeds, and blending until smooth. Strain through a fine sieve to remove pulp.
  2. In a medium saucepan, combine watermelon puree, sugar, cornstarch, salt, and lemon juice over medium heat. Stir continuously until thickened, about 5-7 minutes.
  3. If desired, add food coloring for extra fun.
  4. Remove from heat and cool in the saucepan for a few minutes, then pour into a shallow dish or bowl and refrigerate until set, about 1-2 hours.
  5. Once set, top with gummy worms or other fun toppings before serving.

Notes

Store in an airtight container in the fridge for up to 3 days, or freeze for up to 1 month. Can be reheated gently on the stove if re-liquefied.
