Description

A delightful vegan alternative to whipped cream made from aquafaba, perfect for topping desserts or adding lightness to dishes.


Ingredients

Scale
  • 1/2 cup aquafaba (liquid from canned chickpeas)
  • 1/4 teaspoon cream of tartar (optional)
  • 2 tablespoons powdered sugar (adjust to taste)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Open a can of chickpeas and pour the liquid into a measuring cup. Separate the chickpeas for later use.
  2. In a large mixing bowl, pour the aquafaba. Add cream of tartar for stability (optional).
  3. Using a hand mixer or stand mixer, begin whipping the aquafaba on medium speed and gradually increase to high.
  4. After about 5-10 minutes, notice soft peaks forming. Continue whipping until stiff peaks form.
  5. Slowly add powdered sugar and vanilla extract while continuing to whip. Adjust sweetness as desired.
  6. Scoop the whipped aquafaba onto desired dish and enjoy.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days.
