A delightful vegan alternative to whipped cream made from aquafaba, perfect for topping desserts or adding lightness to dishes.
Ingredients

- 1/2 cup aquafaba (liquid from canned chickpeas)
- 1/4 teaspoon cream of tartar (optional)
- 2 tablespoons powdered sugar (adjust to taste)
- 1 teaspoon vanilla extract (optional)
Instructions
- Open a can of chickpeas and pour the liquid into a measuring cup. Separate the chickpeas for later use.
- In a large mixing bowl, pour the aquafaba. Add cream of tartar for stability (optional).
- Using a hand mixer or stand mixer, begin whipping the aquafaba on medium speed and gradually increase to high.
- After about 5-10 minutes, notice soft peaks forming. Continue whipping until stiff peaks form.
- Slowly add powdered sugar and vanilla extract while continuing to whip. Adjust sweetness as desired.
- Scoop the whipped aquafaba onto desired dish and enjoy.
Notes
Store any leftovers in an airtight container in the fridge for up to 3 days.
