Ingredients

- 2 ¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- Food coloring (various colors)
- Colored sprinkles
- Parchment paper
Instructions
- In a bowl, mix the flour, baking powder, baking soda, and salt.
- In another bowl, beat the softened butter and sugar until light and fluffy. Add in the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture. Stir until a dough forms. Divide the dough into four equal parts and color each part with different food colorings. Knead until the color is evenly distributed. Wrap the dough in plastic wrap and chill for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. Roll out the colored dough into thin sheets. Use cookie cutters or shape them into unicorns or other fun forms. Place cookies on the prepared baking sheets and sprinkle with colored sprinkles.
- Bake for 8-10 minutes or until the edges are slightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cooled cookies in an airtight container at room temperature for up to a week. Baked cookies freeze well for up to 3 months.
