Description

Delicious and visually stunning multi-layered dessert made with rice flour and coconut milk, perfect for any occasion.


Ingredients

Scale
  • 200g rice flour
  • 200g tapioca flour
  • 500ml coconut milk
  • 200g sugar
  • 1 tsp salt
  • Food coloring (varied colors)

Instructions

  1. Fill the steamer or pot with water and bring it to a gentle boil. Ensure the steaming tray is in place and lightly grease your cake mold.
  2. In a large mixing bowl, whisk together the rice flour, tapioca flour, sugar, and salt.
  3. Gradually pour in the coconut milk while stirring to combine until you achieve a smooth batter.
  4. Separate the batter into several bowls based on the number of colors you wish to use.
  5. Add food coloring to each bowl and mix until evenly combined.
  6. Pour a portion of one colored batter into the mold, spreading it evenly. Cover and steam for about 10 minutes or until set.
  7. Once the first layer is set, pour in the next colored batter and steam. Repeat until all layers are in the mold, ensuring each layer is steamed thoroughly before adding the next.
  8. Once all layers are complete, steam for an additional 10-15 minutes to ensure the cake is fully cooked.
  9. Remove the mold from the steamer and allow the cake to cool completely before slicing.
  10. Cut into squares or rectangles and enjoy your homemade Kue Lapis!

Notes

For a fragrant twist, try using pandan extract or cocoa powder. You can also add shredded coconut for a richer texture.
