Description

Delightful cookies featuring a blend of warming spices and crunchy pecans, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped
  • Extra sugar for rolling

Instructions

  1. In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in eggs, one at a time, and add vanilla extract.
  3. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry mixture into the wet mixture, stirring until just combined.
  5. Fold in the chopped pecans.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop tablespoon-sized balls of dough, roll them in extra sugar, and place them on the baking sheets.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to a week. Baked cookies can be frozen for up to 3 months.
