Description

Create visually stunning sparkly crystallized lollipops that are perfect for parties or as unique gifts.


Ingredients

Scale
  • 2 cups granulated sugar
  • 1 cup water
  • Flavoring extract (vanilla, mint, etc.)
  • Food coloring (optional)
  • Lollipop sticks
  • Candy thermometer
  • Medium saucepan
  • Wooden spoon
  • Heat-resistant bowl
  • Wax paper or silicone mat

Instructions

  1. In a medium saucepan, combine the granulated sugar and water.
  2. Stir continuously over medium heat until the sugar dissolves completely.
  3. Once dissolved, add a few drops of your chosen flavoring extract and food coloring, if using.
  4. Attach the candy thermometer to the side of the saucepan. Bring the mixture to a boil without stirring, and let it cook until it reaches 300°F (hard crack stage).
  5. Once at the correct temperature, carefully remove the pan from heat.
  6. While the sugar solution cools slightly, lay out wax paper or a silicone mat.
  7. Use a spoon to drop small mounds of candy onto the prepared surface.
  8. Quickly insert lollipop sticks into the candy blobs before they harden.
  9. Let the lollipops cool completely until they harden into a sparkly finish (about 30 minutes).

Notes

For best results, use a candy thermometer. You can experiment with flavor extracts and toppings for unique variations.
