- Optional: Splash of vinegar or spoonful of honey
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until softened.
- Add cherry tomatoes, smoked paprika, and chili flakes; cook until tomatoes begin to break down.
- Add Romano beans, salt, and pepper, stirring to combine.
- Pour in enough water to cover the beans; bring to a simmer.
- Cover and cook on low heat for about 30 minutes until beans are tender and creamy.
- Adjust seasoning and add optional vinegar or honey if using.
- Serve warm with crusty bread or over grains.
