Ingredients
Scale
- 2–3 cups coarse sea salt
- 1 cup egg whites (about 4–5 eggs)
- Your choice of protein (e.g., chicken, fish, or vegetables)
- Fresh herbs (e.g., rosemary, thyme)
- Optional: garlic cloves, lemon slices, or spices for flavoring
Instructions
- In a mixing bowl, combine the coarse sea salt with the egg whites to create a paste-like consistency.
- Mix well until the salt holds together when pressed.
- Choose your protein: If using chicken or fish, cut into appropriate portions.
- Season your filling with fresh herbs, garlic, or lemon slices as desired.
- Preheat your oven to 350°F (175°C).
- On a baking sheet, create a small mound with your salt mixture, about 1 inch tall.
- Place your prepared protein on top of the mound and cover it with the remaining salt mixture, shaping it into a volcano form. Ensure the top has a peak.
- Carefully place the baking sheet into the preheated oven.
- Bake for about 30-40 minutes, or until the salt crust is firm and lightly golden.
- Remove from the oven and allow it to cool for a few minutes.
- Crack open the salt crust using a mallet or heavy spoon and serve immediately.
Notes
Experiment with different herbs and spices to customize your volcano. Consider using aquafaba for a vegan option.
