Description

A delightful and simple no-cook method to preserve the fresh flavors of summer raspberries.


Ingredients

  • 2 cups of fresh raspberries
  • 2 cups of granulated sugar
  • 1/4 cup of fruit pectin (like Sure-Jell)
  • 1 cup of water
  • Clean jars or containers with tight-fitting lids

Instructions

  1. Wash the fresh raspberries gently under cold water and allow them to drain and dry slightly.
  2. In a large bowl, use a potato masher or fork to crush the raspberries to a chunky texture.
  3. In a separate bowl, combine the granulated sugar and fruit pectin, stirring until well mixed.
  4. Add the sugar-pectin mixture to the mashed raspberries and stir thoroughly until the sugar dissolves, approximately 3-5 minutes.
  5. Allow the mixture to sit for 10-15 minutes to thicken, looking for a slightly gelled texture.
  6. Pour the mixture into clean jars or containers, leaving about 1/2 inch of space at the top. Seal tightly with lids and label with the date.
  7. Place the jars in the freezer for best quality, consume within a year.
