Ingredients

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

  • Food coloring (red, orange, yellow, green, blue, purple)
  • Cupcake liners
  • Frosting (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate large bowl, cream the softened butter and sugar until light and fluffy—about 3-5 minutes.
  4. Beat in the eggs one at a time, followed by the vanilla extract. Mix well until combined.
  5. Gradually add the dry ingredients to the buttery mixture, alternating with the milk. Mix until just combined.
  6. Divide the batter evenly into several bowls (5 or 6). Add different food coloring to each bowl and mix until vibrant.
  7. Using a spoon or piping bag, alternate spoonfuls of each color into the cupcake liners. Use a toothpick or skewer to gently swirl the colors together.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool.
