- 1 box of rainbow cake mix
- 3 large eggs
- 1/3 cup vegetable oil
- 1 cup water
- 2 cups vanilla frosting
- Food coloring (red, blue, yellow, green)
- Sprinkles
- Mason jars or dessert cups
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the cake mix, eggs, vegetable oil, and water. Beat the mixture on medium speed for 2-3 minutes until smooth.
- Divide the batter into 4 separate bowls and add food coloring to each, stirring until desired colors are achieved.
- Grease and flour your baking sheets. Pour each color of batter into the sheets, creating even layers. Bake for 15-20 minutes or until a toothpick comes out clean.
- Allow the cakes to cool completely on a wire rack. Once cooled, crumble each layer into fine pieces in separate bowls.
- Take a jar and start with a layer of one color cake crumbles at the bottom. Add a layer of frosting on top, sprinkle vibrant sprinkles, and repeat the process until the jar is filled, finishing with frosting and sprinkles on top.
Notes
You can bake and crumble the cake ahead of time and store in an airtight container. Store parfaits in the refrigerator for up to 3 days.
