- 4 (6-ounce) fish fillets (like salmon or tilapia)
- 1 cup cherry tomatoes, halved
- 1 bell pepper, sliced (any color)
- 1 zucchini, sliced
- 1 small red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Fresh herbs (e.g., parsley or dill), for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut four large pieces of aluminum foil, about 12 inches each, and lay them flat on a baking sheet.
- Place one fish fillet on each piece of foil. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper.
- Distribute the cherry tomatoes, bell pepper, zucchini, and red onion evenly over the fish.
- Fold the sides of the foil over the fish and veggies, folding down tightly to seal the packets.
- Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the fish is flaky and the vegetables are tender.
- Carefully open the foil packets (watch for steam!) and garnish with fresh herbs before serving.
