Description
A refreshing no-cook Italian salad that captures the essence of an Italian sub, perfect for hot days or quick lunches.
Ingredients

- 1 head Romaine lettuce (or iceberg)
- 6 oz Salami (Genoa preferred)
- 6 oz Ham (deli-thin)
- 4 oz Provolone cheese (or mozzarella/swiss)
- 1 Red onion (thin sliced)
- 1 cup Tomatoes (grape or cherry)
- 1/2 cup Banana peppers (or pepperoncini)
- 1/2 cup Mayo
- 2 tbsp Red wine vinegar
- 1 tsp Italian seasoning
- Salt & pepper to taste
Instructions
- Chop the lettuce into big, uneven bits and place in a large bowl.
- Add the sliced meats and cheese on top of the lettuce.
- Layer on onions, tomatoes, and peppers as desired.
- In a separate bowl, mix the mayo, red wine vinegar, Italian seasoning, salt, and pepper to taste.
- Pour the dressing over the salad and mix until everything is well coated.
- Optionally, sprinkle with parmesan cheese before serving.
Notes
This salad can be prepped ahead of time; just keep the dressing separate until ready to serve to prevent sogginess.
