Description

A refreshing no-cook Italian salad that captures the essence of an Italian sub, perfect for hot days or quick lunches.


Ingredients

Scale
  • 1 head Romaine lettuce (or iceberg)
  • 6 oz Salami (Genoa preferred)
  • 6 oz Ham (deli-thin)
  • 4 oz Provolone cheese (or mozzarella/swiss)
  • 1 Red onion (thin sliced)
  • 1 cup Tomatoes (grape or cherry)
  • 1/2 cup Banana peppers (or pepperoncini)
  • 1/2 cup Mayo
  • 2 tbsp Red wine vinegar
  • 1 tsp Italian seasoning
  • Salt & pepper to taste

Instructions

  1. Chop the lettuce into big, uneven bits and place in a large bowl.
  2. Add the sliced meats and cheese on top of the lettuce.
  3. Layer on onions, tomatoes, and peppers as desired.
  4. In a separate bowl, mix the mayo, red wine vinegar, Italian seasoning, salt, and pepper to taste.
  5. Pour the dressing over the salad and mix until everything is well coated.
  6. Optionally, sprinkle with parmesan cheese before serving.

Notes

This salad can be prepped ahead of time; just keep the dressing separate until ready to serve to prevent sogginess.
