Description

Delicious autumn-flavored cookies combining pumpkin and warm spices, soft and chewy for the perfect treat.


Ingredients

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground ginger

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 cup pure pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Extra sugar for rolling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, baking powder, spices, and salt until well combined.
  3. In a separate large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  4. Mix in the pumpkin puree, egg, and vanilla extract until everything is evenly blended.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Using a cookie scoop or two spoons, drop rounded tablespoons of dough onto the prepared baking sheet.
  7. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
