Description

A comforting Parmesan Chicken Meatloaf packed with flavor, perfect for family dinners and meal prepping.


Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 cup milk
  • Optional: ketchup or marinara sauce for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the ground chicken, breadcrumbs, and Parmesan cheese in a large bowl.
  3. Add minced garlic, chopped onion, chopped parsley, salt, black pepper, oregano, and basil.
  4. Mix gently with your hands or a spoon until well combined, but be careful not to overmix.
  5. Create a well in the center and add the egg and milk.
  6. Mix until just incorporated, ensuring the mixture retains a light texture.
  7. Transfer the mixture to a loaf pan or shape into a loaf on a baking sheet lined with parchment paper. Smooth the top for an even bake.
  8. Spread optional ketchup or marinara sauce on top for added flavor.
  9. Bake for 45-55 minutes or until the internal temperature reaches 165°F (75°C).
  10. Let the meatloaf rest for 10 minutes before slicing.
  11. Serve warm with sides of your choice.
