- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 large egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 cup milk
- Optional: ketchup or marinara sauce for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the ground chicken, breadcrumbs, and Parmesan cheese in a large bowl.
- Add minced garlic, chopped onion, chopped parsley, salt, black pepper, oregano, and basil.
- Mix gently with your hands or a spoon until well combined, but be careful not to overmix.
- Create a well in the center and add the egg and milk.
- Mix until just incorporated, ensuring the mixture retains a light texture.
- Transfer the mixture to a loaf pan or shape into a loaf on a baking sheet lined with parchment paper. Smooth the top for an even bake.
- Spread optional ketchup or marinara sauce on top for added flavor.
- Bake for 45-55 minutes or until the internal temperature reaches 165°F (75°C).
- Let the meatloaf rest for 10 minutes before slicing.
- Serve warm with sides of your choice.
Notes
Try using mozzarella or cheddar cheese for a different flavor. Incorporate finely grated zucchini or bell peppers for added moisture.
