Description

Colorful and vibrant cupcakes that are perfect for any celebration, easy to make and customize.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • Neon food coloring (various colors)
  • Cupcake liners
  • Frosting (store-bought or homemade)
  • Sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In a separate bowl, beat the softened butter and sugar together until light and fluffy.
  4. Add eggs and vanilla extract. Mix until blended. Gradually add the dry ingredients and milk to the mixture, alternating between each. Stir until combined.
  5. Divide the batter into several bowls based on how many colors you want. Add a few drops of neon food coloring to each bowl and mix until vibrant.
  6. Spoon a colorful dollop of each batter into the cupcake liners, creating a swirled effect if desired.
  7. Place in the preheated oven and bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Once cooled, add your favorite frosting and sprinkle with additional neon sprinkles if desired.

Notes

Store leftover cupcakes in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. You can also freeze them in an airtight container.
