- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup unsalted butter (softened)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- Neon food coloring (various colors)
- Cupcake liners
- Frosting (store-bought or homemade)
- Sprinkles (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, whisk together the flour, baking powder, and salt until well combined.
- In a separate bowl, beat the softened butter and sugar together until light and fluffy.
- Add eggs and vanilla extract. Mix until blended. Gradually add the dry ingredients and milk to the mixture, alternating between each. Stir until combined.
- Divide the batter into several bowls based on how many colors you want. Add a few drops of neon food coloring to each bowl and mix until vibrant.
- Spoon a colorful dollop of each batter into the cupcake liners, creating a swirled effect if desired.
- Place in the preheated oven and bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Once cooled, add your favorite frosting and sprinkle with additional neon sprinkles if desired.
Notes
Store leftover cupcakes in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. You can also freeze them in an airtight container.
