Instructions
- If using gelatin, bloom it by sprinkling it over 1/4 cup of cold water and let it sit for about 5 minutes until it swells.
- In a saucepan, combine the granulated sugar, heavy cream, and corn syrup. Heat over medium heat until the sugar dissolves and the mixture begins to simmer, avoiding boiling.
- Remove the saucepan from the heat and add the chopped semisweet chocolate. Allow it to sit for a minute before whisking until smooth and glossy.
- If you’ve prepared gelatin, gently reheat it to dissolve and whisk it into the chocolate mixture.
- For colored glaze, divide the mixture into bowls and add a few drops of food coloring, stirring until evenly blended.
- Allow the glaze to cool to about 90-95°F (32-35°C) for the perfect pourable consistency.
- Place your cake on a cooling rack over a baking sheet. Pour the glaze starting from the center and working outward, ensuring it drips down the sides.
- Let the glaze set for at least 30 minutes before serving.
