- 1 cup all-purpose flour
- ½ cup butter, softened
- 1 teaspoon salt
- 4 tablespoons cold water
- 1 cup shredded cheddar cheese
- 1 cup cooked and diced ham (or your preferred protein)
- ½ cup chopped green onions
- 1 tablespoon mustard (optional)
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, mix together flour and salt. Cut in softened butter until resembling coarse crumbs.
- Gradually add cold water, one tablespoon at a time, mixing until a soft dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- In a separate bowl, combine cheddar cheese, ham, green onions, and mustard (if using). Stir until well blended.
- Preheat oven to 400°F (200°C). On a lightly floured surface, roll out the chilled dough to about ¼ inch thickness.
- Using a round cutter, cut out circles from the dough. You’ll need two circles for each Mini Lid Banjo.
- Place a spoonful of filling in the center of one circle. Top with another circle and press the edges to seal.
- Place the assembled banjos on a baking sheet lined with parchment paper and brush the tops with beaten egg.
- Bake for 15-20 minutes or until the tops are golden brown and flaky. Let cool slightly before serving.
Notes
Use leftover roasted vegetables, chicken, or a vegetarian mix as custom fillings. For gluten-free, substitute with a gluten-free blend.
