- 1 cup granulated sugar
- 1/4 cup water
- 2 tablespoons fresh lemon juice (about 1 lemon)
- 1 teaspoon lemon zest
- Powdered sugar (for dusting)
- Candy thermometer

Instructions
- Prepare your work area by lining a baking sheet with parchment paper and have powdered sugar nearby for dusting.
- In a saucepan, combine the granulated sugar and water. Stir until sugar is dissolved. Add fresh lemon juice and lemon zest to the mixture.
- Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally.
- Attach the candy thermometer to the side of the pan and continue boiling until the temperature reaches 300°F (hard crack stage).
- Immediately pour the hot mixture onto the prepared baking sheet and allow it to cool slightly until it is comfortable to touch but still pliable.
- Once slightly cooled, use your hands to break off pieces and roll them into balls, then roll the balls in powdered sugar to prevent sticking.
- Allow the Lemon Drops to fully cool and harden for at least 30 minutes.
Notes
For a flavor twist, add food coloring or infuse with fresh herbs. Store in an airtight container for freshness.
