Description

A classic candy recipe that combines tartness and sweetness for a delightful treat bursting with citrus flavor.


Ingredients

Scale
  • 1 cup granulated sugar
  • 1/4 cup water
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1 teaspoon lemon zest
  • Powdered sugar (for dusting)
  • Candy thermometer
  • Saucepan
  • Baking sheet
  • Parchment paper
  • Mixing spoon

Instructions

  1. Prepare your work area by lining a baking sheet with parchment paper and have powdered sugar nearby for dusting.
  2. In a saucepan, combine the granulated sugar and water. Stir until sugar is dissolved. Add fresh lemon juice and lemon zest to the mixture.
  3. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally.
  4. Attach the candy thermometer to the side of the pan and continue boiling until the temperature reaches 300°F (hard crack stage).
  5. Immediately pour the hot mixture onto the prepared baking sheet and allow it to cool slightly until it is comfortable to touch but still pliable.
  6. Once slightly cooled, use your hands to break off pieces and roll them into balls, then roll the balls in powdered sugar to prevent sticking.
  7. Allow the Lemon Drops to fully cool and harden for at least 30 minutes.

Notes

For a flavor twist, add food coloring or infuse with fresh herbs. Store in an airtight container for freshness.
