A healthy and customizable breakfast burrito that keeps you satisfied and helps with weight loss.
Ingredients

- 1 large whole wheat tortilla
- 2 eggs (or 1 egg and 2 egg whites)
- 1/4 cup black beans, drained
- 1/4 cup diced tomato
- 1/4 cup chopped spinach
- 2 tablespoons shredded low-fat cheese (optional)
- 2 tablespoons salsa
- 1/4 avocado, sliced
- a little olive oil or nonstick cooking spray
Instructions
- Heat a nonstick pan and spritz with cooking spray.
- Scramble the eggs to your desired doneness.
- Microwave tortilla for about 10 seconds to soften.
- Pile beans, tomatoes, spinach, and scrambled eggs down the middle of the wrap.
- Add cheese if using, then a spoonful of salsa and avocado slices.
- Tuck the sides in and roll tightly from the bottom up.
- Toast the burrito in a dry pan for 1–2 minutes if desired.
Notes
Don’t overfill your wrap, and experiment with seasonings to enhance flavor.
