Ingredients

  • 8 ounces dark or semisweet chocolate, chopped or in chips
  • 1 teaspoon coconut oil or neutral oil for shine
  • Pinch of flaky sea salt, optional
  • Optional garnish: crushed pistachios, cacao nibs, or a drizzle of white chocolate

Instructions

  1. Prep the pomegranate: Spread arils on a clean kitchen towel and gently pat dry.
  2. Melt the chocolate: Place chocolate and oil in a heatproof bowl. Microwave in 20 to 30 second bursts, stirring between each, until smooth.
  3. Coat the arils: Stir the pomegranate into the melted chocolate until every piece is coated.
  4. Scoop: Use a teaspoon to drop small clusters onto a parchment lined sheet pan.
  5. Finish: Sprinkle with flaky salt or your favorite garnish if desired.
  6. Chill and set: Refrigerate for 20 to 30 minutes until firm.

Notes

For perfectly round clusters, use a small silicone candy mold.
