Description

A delightful cornbread recipe that balances sweetness and texture, perfect as a side dish or for breakfast.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter (or vegetable oil)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease an 8-inch square baking pan with butter or line it with parchment paper.
  3. In a large mixing bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  4. In another bowl, whisk the milk, eggs, and melted butter together.
  5. Pour the wet mixture into the dry ingredients and stir just until moistened.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 20-25 minutes or until golden brown.
  7. Allow the cornbread to cool in the pan for 5 minutes before transferring to a wire rack. Slice and enjoy warm!

Notes

For added flavor, mix in jalapeños for heat or shredded cheese for richness. To make it dairy-free, replace milk with almond or oat milk and use coconut oil instead of butter.
