Description

Learn the basic spherification method to make delightful popping boba at home, perfect for drinks and desserts.

Ingredients

Scale
  • 1 cup juice or flavored liquid (e.g., fruit juice, flavored tea)
  • 1 teaspoon sodium alginate
  • 1 teaspoon calcium lactate
  • 1 cup water
  • Bowl for mixing
  • Spoon or dropper for shaping boba
  • Strainer
  • Syringe (optional)
  • Gloves (recommended)

Instructions

  1. Prepare the flavored liquid by mixing 1 teaspoon of sodium alginate into 1 cup of your chosen liquid using a blender until fully dissolved.
  2. Create the calcium bath by mixing 1 teaspoon of calcium lactate with 1 cup of water and allowing it to stand.
  3. Using a spoon or dropper, gently drop the flavored liquid into the calcium bath to form spheres that harden instantly.
  4. Use a strainer to gather the popping boba from the bath.
  5. Rinse the boba in clean water to remove excess calcium and store in simple syrup or flavored liquid in the fridge until ready to use.

Notes

Experiment with different flavors and colors for customizable popping boba. High-acid juices may hinder the spherification process.
