Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth and well blended.
  3. Sift together the flour, baking soda, baking powder, salt, and spices in another bowl. Gradually add the dry ingredients to the wet mixture.
  4. Stir until just combined—resist the urge to overmix! The batter should be thick but smooth.
  5. Pour the batter into the prepared loaf pan. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean and the top is golden brown.
  6. Let cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
