Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth and well blended.
- Sift together the flour, baking soda, baking powder, salt, and spices in another bowl. Gradually add the dry ingredients to the wet mixture.
- Stir until just combined—resist the urge to overmix! The batter should be thick but smooth.
- Pour the batter into the prepared loaf pan. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean and the top is golden brown.
- Let cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
