Description

Delicious homemade caramels that are soft, chewy, and customizable with various flavors.


Ingredients

Scale
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Cooking spray or parchment paper (for lining)

Instructions

  1. Line an 8-inch square baking dish with parchment paper, lightly spray with cooking spray.
  2. In a medium saucepan, combine the granulated sugar, corn syrup, and salt.
  3. Place the saucepan over medium heat, stirring constantly until the sugar has melted and the mixture is bubbling.
  4. Slowly add the unsalted butter while stirring continuously until fully melted.
  5. Carefully stir in the heavy cream and cook, stirring frequently until the mixture reaches 240°F (soft ball stage) on a candy thermometer.
  6. Remove from heat and stir in the vanilla extract.
  7. Pour the caramel into the prepared baking dish, spreading evenly.
  8. Allow to cool at room temperature for several hours, or until completely set.
  9. Lift the caramel out using the parchment overhang and cut into squares or rectangles.

Notes

Try adding a pinch of sea salt for a salted caramel version or infuse the cream with vanilla beans for extra richness.
