Delicious homemade caramels that are soft, chewy, and customizable with various flavors.

- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1 cup heavy cream
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Cooking spray or parchment paper (for lining)
Instructions
- Line an 8-inch square baking dish with parchment paper, lightly spray with cooking spray.
- In a medium saucepan, combine the granulated sugar, corn syrup, and salt.
- Place the saucepan over medium heat, stirring constantly until the sugar has melted and the mixture is bubbling.
- Slowly add the unsalted butter while stirring continuously until fully melted.
- Carefully stir in the heavy cream and cook, stirring frequently until the mixture reaches 240°F (soft ball stage) on a candy thermometer.
- Remove from heat and stir in the vanilla extract.
- Pour the caramel into the prepared baking dish, spreading evenly.
- Allow to cool at room temperature for several hours, or until completely set.
- Lift the caramel out using the parchment overhang and cut into squares or rectangles.
Notes
Try adding a pinch of sea salt for a salted caramel version or infuse the cream with vanilla beans for extra richness.
