			- 8 oz pasta (your choice)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach leaves
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- In a large pot, bring salted water to a boil.
- Stir in the pasta and cook according to package instructions until al dente.
- Reserve ½ cup of pasta water, then drain the pasta.
- In a large skillet, heat olive oil over medium heat.
- Sauté minced garlic until fragrant, about 1 minute.
- Add cherry tomatoes and cook until softened, about 3-4 minutes.
- Stir in the spinach leaves, allowing them to wilt.
- Toss the cooked pasta into the skillet with the sautéed mixture.
- Pour in reserved pasta water, if needed, to blend. Season with salt and pepper.
- Top with grated Parmesan cheese and garnish with fresh basil, if desired.
