Description

Delightful homemade gummies made with fresh raspberries and natural pectin, perfect for a guilt-free indulgence.


Ingredients

  • 2 cups fresh raspberries (or frozen, thawed)
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1/4 cup sugar (adjust to taste)
  • 2 tablespoons pectin (choose low-sugar or regular)

Instructions

  1. In a small saucepan, combine the raspberries and water. Bring to a gentle simmer over medium heat, mashing the berries with a fork as they cook. Once soft, remove from heat and let it cool slightly.
  2. Pour the cooked raspberry mixture through a fine mesh strainer into a bowl, pressing down to extract as much juice as possible. Discard the seeds and pulp, keeping the vibrant raspberry juice.
  3. In the same saucepan, add the raspberry juice, lemon juice, and sugar. Stir well. Gradually whisk in the pectin until fully dissolved.
  4. Place the saucepan over medium heat and bring to a gentle boil, stirring constantly for about 2-3 minutes, ensuring the mixture thickens.
  5. Carefully pour the gummy mixture into silicone molds, filling them about 3/4 full. Allow them to cool at room temperature for about 15 minutes, then transfer to the refrigerator for at least 1-2 hours until fully set.
  6. Once the gummies are firm, gently pop them out of the molds.

Notes

Store gummies in an airtight container in the refrigerator for up to 2 weeks. Experiment with other fruits for different flavors.
