- 2 cups fresh raspberries (or frozen, thawed)
- 1/4 cup water
- 1 tablespoon lemon juice
- 1/4 cup sugar (adjust to taste)
- 2 tablespoons pectin (choose low-sugar or regular)
Instructions
- In a small saucepan, combine the raspberries and water. Bring to a gentle simmer over medium heat, mashing the berries with a fork as they cook. Once soft, remove from heat and let it cool slightly.
- Pour the cooked raspberry mixture through a fine mesh strainer into a bowl, pressing down to extract as much juice as possible. Discard the seeds and pulp, keeping the vibrant raspberry juice.
- In the same saucepan, add the raspberry juice, lemon juice, and sugar. Stir well. Gradually whisk in the pectin until fully dissolved.
- Place the saucepan over medium heat and bring to a gentle boil, stirring constantly for about 2-3 minutes, ensuring the mixture thickens.
- Carefully pour the gummy mixture into silicone molds, filling them about 3/4 full. Allow them to cool at room temperature for about 15 minutes, then transfer to the refrigerator for at least 1-2 hours until fully set.
- Once the gummies are firm, gently pop them out of the molds.
Notes
Store gummies in an airtight container in the refrigerator for up to 2 weeks. Experiment with other fruits for different flavors.
