Instructions
- Prepare your workspace by clearing your kitchen counter and gathering all materials. Lay out a sheet of parchment paper on a flat surface for cooling.
- In a medium saucepan, combine the granulated sugar and light corn syrup. Stir gently to combine, then heat over medium heat.
- Attach a candy thermometer to the saucepan. Continue to cook without stirring until the mixture reaches 300°F (hard crack stage), stirring occasionally.
- Remove from heat once the temperature is reached. Immediately stir in the baking soda and flavored extract. If using, add a few drops of food coloring for a vibrant hue.
- Quickly mix in the citric acid, which will create the popping effect. Be careful, as the mixture may bubble up!
- Pour the mixture onto the parchment paper, spreading it out evenly. Let it cool completely before breaking it into pieces.
Notes
