  • Cooking spray
  • Candy thermometer
  • Baking sheet
  • Parchment paper

Instructions

  1. Prepare your workspace by cleaning and organizing your kitchen counter. Line a baking sheet with parchment paper and lightly spray it with cooking spray.
  2. In a saucepan, mix together granulated sugar, corn syrup, and flavoring. Heat over medium heat, stirring until the sugar dissolves. Use a candy thermometer to cook until the mixture reaches 300°F (hard crack stage).
  3. Once at temperature, quickly remove from heat and stir in baking soda and citric acid, which will cause bubbling. If desired, add food coloring for vibrant colors.
  4. Pour the mixture onto the prepared baking sheet, spreading it evenly, and allow to cool completely at room temperature.
  5. Once cooled, break the candy into small pieces or use a food processor for finer crystals.
