- 1 cup granulated sugar
- 4 tablespoons unflavored gelatin
- 1/2 cup corn syrup
- Pinch of salt
- Cornstarch or powdered sugar for dusting
- A candy thermometer (optional)
- A 9x9-inch baking dish
- Parchment paper
Instructions
- Line your 9×9-inch baking dish with parchment paper, leaving an overhang for easy removal later. Lightly dust with cornstarch or powdered sugar to prevent sticking.
- In a medium saucepan, mix the fruit juice, granulated sugar, corn syrup, and a pinch of salt. Stir until the sugar dissolves, using a whisk for an even blend.
- Place the saucepan over medium heat and bring the mixture to a gentle simmer. If using, insert the candy thermometer; you’re aiming for 240°F (soft-ball stage).
- Remove the saucepan from heat and gradually sprinkle the gelatin into the hot mixture, whisking continuously to prevent lumps. Let it sit for a few minutes to thicken.
- Once fully combined, pour the mixture into the prepared baking dish and spread evenly.
- Allow the gumdrops to cool at room temperature for at least 4 hours or until fully set. Once firm, lift out using the parchment paper and cut into cubes or desired shapes. Dust the pieces with cornstarch or powdered sugar to prevent sticking.
