Ingredients

  • 1 ripe avocado
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice

Instructions

  1. Place the eggs in a pot and cover them with water.
  2. Bring the water to a boil over medium heat.
  3. Once boiling, reduce heat and let simmer for 10-12 minutes.
  4. Transfer eggs to an ice bath to cool for 5-10 minutes.
  5. Peel the cooled eggs and slice them in half lengthwise.
  6. Gently scoop out the yolks into a mixing bowl.
  7. Add the avocado, mayonnaise, Dijon mustard, and lemon juice to the yolks.
