Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk, cold
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Add the cold, cubed butter to the dry mixture and work it into the flour until it resembles coarse crumbs.
  4. Make a well in the center and pour in the cold buttermilk (and honey, if using). Stir gently until just combined.
  5. Transfer the dough onto a floured surface. Pat it into a rectangle about 1-inch thick and fold over itself two or three times. Roll it out to 1-inch thickness again and cut out biscuits.
  6. Place the biscuits on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
  7. Remove from the oven, let cool slightly, and enjoy warm with butter or jam.
