- 1 cup white chocolate chips
- 1 cup cookie crumbs (vanilla or chocolate)
- 1 cup cream cheese, softened
- Food coloring (red and green)
- 1/2 cup candy eyes (various sizes)
- Wax paper
- Mixing bowl
- Baking sheet
Instructions
- In a mixing bowl, combine the cookie crumbs and softened cream cheese and mix until fully combined to a thick and sticky consistency.
- Scoop out about 1 tablespoon of the mixture and roll it into a ball, then place on a baking sheet lined with wax paper.
- Repeat until all mixture is used—aim for about 12–15 eyeballs.
- Chill the baking sheet in the refrigerator for about 30 minutes to firm up.
- Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Dip each cold eyeball into the melted white chocolate, ensuring even coating and allowing excess to drip off.
- Immediately place a candy eye on top of each coated eyeball and drizzle with red or green food coloring to create veins.
- Chill again for an additional 30 minutes to set the chocolate.
Notes
These eyeballs can be made a day in advance, just keep them refrigerated until serving. Try various flavor extracts in the filling for unique taste!
