Description

Delightful homemade marshmallows inspired by the Ghostbusters franchise, perfect for parties and sweet indulgence.


Ingredients

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • ½ teaspoon salt
  • 1 cup water (divided)
  • 3 tablespoons gelatin powder
  • 1 teaspoon vanilla extract
  • Food coloring (optional)
  • Powdered sugar (for dusting)
  • Cornstarch (for dusting)
  • Whipped cream (for topping, optional)

Instructions

  1. Bloom the Gelatin: In a small bowl, combine ½ cup of cold water and the gelatin powder. Let it sit for about 10 minutes until it swells.
  2. Combine Ingredients: In a saucepan, mix the granulated sugar, corn syrup, salt, and the remaining ½ cup of water.
  3. Heat: Bring to a boil over medium heat. Do not stir. Use a candy thermometer to monitor temperature.
  4. Reach Temperature: Once the mixture reaches 240°F (soft-ball stage), remove from heat.
  5. Mix Gelatin and Sugar: Pour the hot syrup into the bloomed gelatin. Using a mixer, beat on high until the mixture is white and fluffy, approximately 10-15 minutes.
  6. Add Flavor: Mix in the vanilla extract and a few drops of food coloring if desired.
  7. Prepare the Pan: Dust a 9×13-inch baking dish with a mixture of powdered sugar and cornstarch.
  8. Pour the Mixture: Transfer the marshmallow mixture into the prepared dish, spreading it evenly.
  9. Let It Set: Allow the marshmallows to sit uncovered at room temperature for at least 4 hours, preferably overnight.
  10. Cut Marshmallows: Once set, dust a cutting board with more powdered sugar and cornstarch, then turn the marshmallows out and cut them into squares.
  11. Finish with Dusting: Toss the cut marshmallows in more powdered sugar and cornstarch to prevent sticking.
