- 2 cups fruit juice (your choice—berry, tropical, or citrus)
- 1 cup yogurt (vanilla or a complementary flavor)
- 2 teaspoons unflavored gelatin
- 2 tablespoons honey or sweetener of your choice
- Optional: food coloring
- Optional: fresh fruit pieces
Instructions
- In a medium saucepan, heat 1 cup of your chosen fruit juice over low heat.
- Once warmed, sprinkle the gelatin evenly over the juice and whisk until fully dissolved, about 3-5 minutes.
- Remove from heat and allow to cool.
- Stir in the remaining cup of fruit juice and yogurt. Add honey and mix well. If desired, add food coloring.
- Pour the mixture into silicone molds or a freezer-safe dish, adding pieces of fresh fruit if desired.
- Freeze for at least 4 hours, or until solid.
- Remove treats from molds and enjoy!
Notes
Store leftovers in an airtight container in the freezer for up to 2 weeks. A quick zap in the microwave can restore softness if needed.
