- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup whole milk
- Food coloring (various colors)
- 4 cups frosting (store-bought or homemade)
- Rainbow sprinkles
Instructions
- Preheat your oven to 350°F (175°C) and grease/flour three 9-inch round cake pans.
- Whisk together flour, baking powder, and salt in a bowl.
- Cream the butter and sugar together until light and fluffy in a separate bowl.
- Add eggs one at a time to the butter mixture, beating well after each addition.
- Mix in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with milk, until just combined.
- Divide the batter into separate bowls for coloring (4-6 depending on colors) and mix different food colorings into each bowl.
- Pour each colored batter into the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Level the tops of the cooled cakes. Place the first layer on a serving plate and spread frosting evenly on top.
- Add the second layer and repeat the frosting process. Finally, top with the last layer and cover the entire cake with frosting.
- Generously sprinkle rainbow sprinkles on top for a festive finish.
Notes
For gluten-free, substitute gluten-free flour. Can be made ahead by storing baked cakes in the fridge or freezer.
