Scale
  • 2 cups old-fashioned rolled oats
  • 1 cup mixed nuts (almonds, walnuts, pecans)
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the oats, mixed nuts, shredded coconut, cinnamon, and salt.
  3. In a separate small bowl, whisk together the honey or maple syrup, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients and stir until evenly combined.
  5. Spread the mixture evenly onto the lined baking sheet and bake for 20-25 minutes, stirring halfway through.
