Description

A refreshing spring salad featuring crisp romaine, juicy tomatoes, and crunchy radishes, paired with a homemade dressing.


Ingredients

  • 6 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup radishes, sliced thin
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Rinse & Chop: Wash the romaine lettuce under cold water and chop it into bite-size pieces in a large mixing bowl.
  2. Slice the Veggies: Halve the cherry tomatoes, slice the radishes, and dice the cucumber. Add to the bowl.
  3. Combine Ingredients: In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  4. Shake it Up: If using a jar, secure the lid and shake well. If using a bowl, whisk until smooth.
  5. Mix: Drizzle the dressing over the salad and gently toss until everything is coated. Garnish with crumbled feta.

Notes

Consider adding grilled chicken or chickpeas for added protein. You can also swap feta for goat cheese or a dairy-free option.
