Ingredients

- 2 cups marshmallows (mini or regular)
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
- 3 cups rice cereal (like Rice Krispies)
- 1 cup chocolate chips (dark or milk as preferred)
- 1 cup nuts (peanuts, almonds, or your favorite), roughly chopped
- 1 cup powdered sugar (for dusting)
Instructions
- Line a baking sheet with parchment paper to prevent sticking.
- In a large saucepan over medium heat, melt the butter. Add the marshmallows and stir until completely melted and smooth, about 3-5 minutes.
- Remove the saucepan from heat and stir in the vanilla extract.
- Quickly add the rice cereal and nuts into the marshmallow mixture. Stir until everything is well coated.
- Allow the mixture to cool slightly. With buttered hands or using a greased spatula, scoop and shape the mixture into bite-sized “rocks.”
- Gently melt the chocolate chips and drizzle over the formed moon rocks or dip them into the chocolate for an extra layer of flavor.
- Dust your moon rocks with powdered sugar for a finishing touch!
- Place the moon rocks in the refrigerator for at least 30 minutes to set.
