Description

A rich, buttery cornbread that’s a staple in Southern cuisine, perfect for any family gathering.


Ingredients

  • 1 cup cornmeal
  • 1 cup buttermilk (or milk)
  • 1/2 cup all-purpose flour (or another cup of cornmeal for gluten-free)
  • 1/4 cup sugar (optional, adjust to taste)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/4 cup melted butter (plus extra for greasing)

Instructions

  1. Preheat your oven to 400°F (200°C) and grease an 8-inch cast-iron skillet or a baking dish with butter.
  2. In a large mixing bowl, whisk together the cornmeal, flour, baking powder, baking soda, sugar, and salt until well combined.
  3. In another bowl, mix the buttermilk, egg, and melted butter until blended.
  4. Pour the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix; some lumps are okay.
  5. Pour the batter into the prepared skillet and smooth the top.
  6. Bake for 20 to 25 minutes until the top is golden brown and a toothpick inserted comes out clean.
  7. Allow it to cool for a few minutes before slicing. Serve warm with butter or honey!

Notes

Can be made gluten-free by using only cornmeal. Serve with honey or butter for added flavor.
