Ingredients

- 1 cup cornmeal
- 1 cup buttermilk (or milk)
- 1/2 cup all-purpose flour (or another cup of cornmeal for gluten-free)
- 1/4 cup sugar (optional, adjust to taste)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg
- 1/4 cup melted butter (plus extra for greasing)
Instructions
- Preheat your oven to 400°F (200°C) and grease an 8-inch cast-iron skillet or a baking dish with butter.
- In a large mixing bowl, whisk together the cornmeal, flour, baking powder, baking soda, sugar, and salt until well combined.
- In another bowl, mix the buttermilk, egg, and melted butter until blended.
- Pour the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix; some lumps are okay.
- Pour the batter into the prepared skillet and smooth the top.
- Bake for 20 to 25 minutes until the top is golden brown and a toothpick inserted comes out clean.
- Allow it to cool for a few minutes before slicing. Serve warm with butter or honey!
Notes
Can be made gluten-free by using only cornmeal. Serve with honey or butter for added flavor.
