Description

A cozy dessert that combines the soft texture of pumpkin with a gooey cinnamon swirl and a simple glaze, perfect for fall gatherings.


Ingredients

  • 1 box yellow cake mix
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 1 cup brown sugar
  • 2 teaspoons cinnamon
  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk (add slowly)
  • 1 teaspoon vanilla extract (optional but lovely)

Instructions

  1. Heat your oven to 350°F. Grease a 9×13 baking dish.
  2. In a big bowl, mix the cake mix, pumpkin puree, eggs, oil, and water until smooth.
  3. Pour half of the batter into your baking dish and spread it out.
  4. In a small bowl, mix brown sugar and cinnamon, then sprinkle it evenly over the batter.
  5. Pour the rest of the batter over the cinnamon layer and spread gently.
  6. Bake for 35 to 45 minutes. Check at 35 minutes for doneness with a toothpick.
  7. While the cake bakes, whisk powdered sugar with milk and vanilla to make a glaze.
  8. When the cake comes out, let it sit for 5 to 10 minutes, then drizzle the glaze over the top while warm.

Notes

If the glaze feels too thick, add milk a teaspoon at a time. For more spice, consider adding nutmeg to the cinnamon sugar.
