- 1 box yellow cake mix
- 1 cup pumpkin puree (not pumpkin pie filling)
- 3 eggs
- 1/2 cup vegetable oil
- 1/2 cup water
- 1 cup brown sugar
- 2 teaspoons cinnamon
- 1 cup powdered sugar
- 2 to 3 tablespoons milk (add slowly)
- 1 teaspoon vanilla extract (optional but lovely)
Instructions
- Heat your oven to 350°F. Grease a 9×13 baking dish.
- In a big bowl, mix the cake mix, pumpkin puree, eggs, oil, and water until smooth.
- Pour half of the batter into your baking dish and spread it out.
- In a small bowl, mix brown sugar and cinnamon, then sprinkle it evenly over the batter.
- Pour the rest of the batter over the cinnamon layer and spread gently.
- Bake for 35 to 45 minutes. Check at 35 minutes for doneness with a toothpick.
- While the cake bakes, whisk powdered sugar with milk and vanilla to make a glaze.
- When the cake comes out, let it sit for 5 to 10 minutes, then drizzle the glaze over the top while warm.
Notes
If the glaze feels too thick, add milk a teaspoon at a time. For more spice, consider adding nutmeg to the cinnamon sugar.
